At YTI Career Institute - Lancaster (YTI) there are two culinary programs offered: Culinary Arts/Restaurant Management and Pastry Arts. Both programs are offered in a hybrid format, which means that lectures are online, and labs are in-person on campus.

Culinary Arts/Restaurant Management

  • Associate in Specialized Business
  • Eligible to apply for certification as a Certified Culinarian (CC) through the American Culinary Federation (ACF) (must be a member of ACF prior to graduation)

    While in the program, students will be taught important skills and techniques that can assist them in culinary careers after graduation. Below are some potential jobs in the field (these may vary based on additional schooling, experience, time worked in the field, etc.)1:

    Chef2

    • Set up kitchen
    • Study recipes and gather ingredients
    • Supervise cooks and assist as needed
    • Ensure appealing plate representation
    • Experiment with new recipes

    Research Chef3

    • Study the shelf life of food items and ingredients
    • Take measurements of ingredients being used
    • Read food-related media and industry reports
    • Take notes during the food product creation process
    • Meet with market researchers to determent a food product's market appeal

    Baker/Pastry Chef4

    • Prepare baked goods
    • Decorate and present pastries
    • Meet with customers to discuss custom desserts/baked goods
    • Develop new seasonal recipes and menus
    • Operate the pastry section of a kitchen

    Restaurant Manager5

    • Train staff to follow restaurant procedures
    • Organize schedules
    • Keep track of employees' hours
    • Record payroll data
    • Order food, linens, gloves, and other supplies

    Food Stylist/Photographer6

    • Develop new recipes
    • Create recipe database for social media
    • Sourcing ingredients
    • Working with buyers
    • Documents meals and recipes

    Food and Beverage Writer7

    • Write about food and drink
    • Report on food or cooking-related events
    • Interview chefs or other cooks
    • Review recipes or restaurants
    • Target content to certain culinary-specific audiences
