The Pennsylvania School of Culinary Arts - a Division of YTI Career Institute-Lancaster recently completed an extensive kitchen remodel. Unique in its design and equipment, The Escoffier Kitchen, named after Chef Georges Auguste Escoffier, accommodates a culinary lab of up to 18 students and has a seating capacity of 50.
The kitchen features an automatic hood that senses dirt and heat and automatically adjusts itself; an induction stove that works magnetically and only cooks when there’s contact with stainless steel; and an European flat top, also known as a bulls eye burner. It has granite countertops, built in trash cans and outlets, a charcoal grill, salamander and convection ovens, and a built in sound system and projector.

With the growing expansion of the Culinary and Pastry programs, space was becoming a premium and our existing Demo Kitchen was only being used for demonstration purposes.
